Ingredients: Sweet white rice flour, whole grain brown rice flour, potato starch, whole grain sorghum flour, tapioca flour, xanthan gum, non-gmo natural cane sugar, dark brown sugar, organic chocolate chips (organic cane sugar, organic chocolate liquor, organic cocoa cutter, organic soy lecithin, organic vanilla extract), baking soda, salt, cinnamon, ginger.
Directions: Preheat oven to 350 degrees F. Pour dry ingredients from bag into large mixing bowl. In a medium mixing bowl, mix together 1 large egg, 3/4 teaspoon vanilla extract, 1/4+1/8 cup softened butter). Pour in the dry ingredient mix and mix together until well blended. Drop by tablespoonful onto a baking sheet. Bake for 10-14 minutes until slightly golden (less time for chewier cookies, more time for crunchier cookies). Remove from oven and cool on a wire rack for 15 minutes.
Yield: Makes about 2 1/2 cookies.
